Sarnia — By JD Booth on March 12, 2012 at 11:49 amAs "Pam" of "Pam's Kitchen" told us in our first episode of "The Wrap," LambtonShield.com's video magazine, it can be a challenge to provide your family with nutritious yet economical meals.
Pam, with this regular feature, hopes to help and we're happy to have her on board as a contributor to Sarnia-Lambton's best source for LOCAL news.
Broiled Fish Fillets
A healthy, economical and tasty way to give fish a flavour boost.
Cook Time: 10 min.
Prep Time: 15 min.
Serves: 4
What you'll need:
1 lb. fish fillets (tilapia is a good choice)
2 tbsp. soft non-hydrogenated margarine
1 1/2 tbsp. fat free or light mayonnaise
1 tbsp. lemon juice
1/3 cup grated parmesan cheese
1/8 tsp. dried basil
1/8 tsp. onion powder or onion flakes
1/8 tsp. celery salt
What you'll do:
- Preheat broiler.
- Place foil over a shallow baking pan, then spray foil with cooking spray.
- Arrange fillets in a single layer and broil for 4-5 min., turning after 3 min.
- While fillets are broiling mix the rest of the ingredients in a small bowl.
- Remove fillets from broiler and cover the top of them only with the mixture.
- Return to broiler for 2 min or until fish flakes.
To save some money, it is a good idea to buy your spices at the bulk food store. Watch your weekly flyers and buy things when they are on sale and pack your pantry.
Next week I'll have a list of stores that price match flyers.
